I've eaten eggplant quite a few times and I'm 23 weeks pregnant and baby is still kickin. I've eaten runny eggs, and medium-rare steak (just the way I like it) and soft cheeses (stuff pregnant women are *actually* suppose to avoid).... I'm sure if it were a real problem, there would be real warnings against people eating eggplant (actual warnings - like from doctors and midwives, not from superstitious internet articles).

I'm 20 weeks and have been eating eggplant and parmesan through my whole pregnancy. I don't see why eating them together would cause problems. If it was a genuine risk your doctor would have warned you off it. I avoided runny eggs for the whole of my first trimester; when I asked my midwife about them, she said most of the food-safety rumours are just scare-mongering. Our bodies and babies are pretty tough, so don't worry and enjoy!

I was getting ready to try making this for the first time because my friend makes it a lot and I wanted to try it. However, I googled it before starting to make it and I was not comfortable from what I read to actually eat it while I am pregnant, so I, personally, will not be making/eating any of it.
