Best Banana Bread Recipe EVER

If you're like me, you probably love you a good piece of banana bread. That's why, when I found this award winning (no, really - it's a blue ribbon award winning banana bread recipe years and years in a row) recipe, I knew I just had to share it with you all. For sake of giving credit where it's due, this recipe is from a lady named Mary Louise over at this nifty little website I found called 'Just a Pinch' Recipes.

But I am going to copy/paste it here for you all. I made a loaf last night and let's just say there's only 1/4 of the pan left lol! My sons and husband ADORE it - I loved it tremendously, had a small piece last night and one this morning, and I am going to make a fresh pan before my daughter comes home from grandma's in Boston where she spent the summer. My oldest daughter, Hannah, will be staying with my mom and starting the school year up there. I know nobody here knows the situation with her, so let's just say it's for the best - at least for right now. She's where she needs to be although it kills me that I haven't seen her in 3 months, and I won't be seeing her tomorrow when Amber comes home. That's another story for another time...

Onto the banana bread recipe!


Ingredients
2 c flour
3/4 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1/2 c butter, room temperature
1 c sugar (I used about 1/2 c of sugar instead, I felt that was too much - the bananas sweeten the bread)
2 eggs
1 1/2 c ripe banana pulp, mashed (I used 3 ripe bananas)
1/4 c sour cream
1 tsp vanilla
1/2 c chopped walnuts are optional


Directions:
1 Sift dry ingredients together.
2 In a large bowl cream butter and sugar well. Add eggs and beat well until light and fluffy. Add vanilla.
3 Mix banana pulp with with sour cream, add alternately with dry ingredients to butter, sugar and eggs mixture on slow speed. Scraps sides as needed.
4 DO NOT OVER BEAT. Beat only until combined. I then stir with a wooden spoon to make sure it is all combined.
5 Bake at 350 degrees in a greased and floured loaf pan, 9X5X3 for 50-60 minutes.

Test with a cake tester. Do not test in the crack. Test off to the side. It should come out clean, but be careful not to over bake. You want a moist banana bread.
